For this Grilled Pineapple recipe, Iโ€™ve create a delectable Brown Sugar Chili Glaze spiked with chili powder and lime that youโ€™ll want to smother on everything (more on that below)ย  but you can forgo the glaze if you wish, however and simply season your pineapple.ย  It tastes fabulous with:

TIPS for how to grill pineapple

  • Choose ripe but firm pineapple: Choose a pineapple thatโ€™s sweet and ripe, but still firm enough to hold its shape on the grill.
  • Cut into thick slices or spears: Thicker pieces prevent the pineapple from falling apart and help it stand up to the heat and glaze.
  • Preheat the grill and oil the grates: A hot, well-oiled grill prevents sticking and gives the pineapple beautiful sear marks.
  • Grill over medium heat: This allows the pineapple to caramelize slowly without burning the sugars in the glaze.
  • Donโ€™t move it too much: Let each side grill undisturbed until it easily releases from the grill to get defined char marks and maximum caramelization.
  • Adjust to taste: You can make the glaze less sweet by using less sugar or adding additional lime juice or spicier by adding extra chili powder. Use more or less glaze depending on how strong you want it.

How to Know When a Pineapple is Ripe?ย 

You can purchase a ripe pineapple if ready to grill immediately, but you will often have to select a pineapple and wait to ripen.ย  Here is how you know your pineapple is ready to be grilled and eaten:

โ€ขTouch: Gently squeeze the pineapple. The skin should give a little, but it should still be firm.
โ€ขSmell: ย Put your nose close to the bottom of the fruit. It should smell sweet; that indicates it is ripe.
โ€ขSound: Tap the pineapple.ย  Unripe fruits sound hollow, whereas ripe pineapples sound dull and solid.
โ€ขColor: ย A green pineapple can be ripe, but more often than not, look for yellow coloring around the eyes and base.
โ€ขShape:ย  When a pineapple is ripe, the eyes will be uniform in size instead of small on the bottom and large in the middle.

How to cut pineapple into wedges

I prefer wedges for this grilled pineapple recipe, but you may also slice the pineapple into rounds.ย  To cut a pineapple into wedges:

1. Turn the pineapple on its side, cut off the top and bottom, and discard about 1 inch from the top and bottom.
2. Stand the pineapple upright and cut lengthwise to remove and discard the tough outer peel in strips.
3. Go back around the pineapple and cut off any remaining hard bits of peel called โ€œeyes.โ€
4. Cut the pineapple into quarters lengthwise through the core.
5. Cut in half again to create smaller then again as desired to create smaller wedges.
5. Remove and discard each section of core.

How can you ripen a pineapple quickly?

If you are eager to make this recipe, but your pineapple isnโ€™t ripe yet, you can help speed the process along. Place the whole pineapple and a whole apple in a paper bag and fold over the top of the bag. Leave at room temperature for 1-2 days or until the pineapple is ripe.

How long is pineapple good for after cutting?

Sliced or cut pineapples will last 3 to 5 days in the fridge. ย ย Store them in an airtight container in your produce drawer.ย  ย This is handy because you can slice your pineapple as soon as it is ripe if you arenโ€™t ready to make Grilled Pineapple yet.

If you havenโ€™t used your pineapple before it goes bad, you can freeze it.ย  ย Chop the pineapple into chunks and freeze in an airtight container.ย  I separate the pieces into plastic bags for smoothies. ย ย Frozen pineapple slices or chunks will last 10 to 12 months in the freezer.

How do you know when a pineapple goes bad?

You will know what pineapple NOT to select or when youโ€™ve let your pineapple sit too long when it has:

โ€ขBrown leaves
โ€ขOverly soft
โ€ขWet bottom
โ€ขDry body
โ€ขCracked, wrinkled or brown body
โ€ขThe aroma is no longer sweet
โ€ขHas a pungent, sour smell (similar to vinegar)

To prevent your pineapple from going bad, you can move it to the refrigerator to slow down the ripening process.

Is grilled pineapple good for you?

Yes! Pineapple is generally good for you, mainly because it is a heart-healthy food that does not contain cholesterol. You can lower your risk of obesity, heart disease, and related conditions by maintaining a diet low in cholesterol and saturated fat. However, the glaze contains both butter and brown sugar, which are more indulgent and the best for a low fat, low sugar diet.

Pineapple also contains high amounts of vitamin C and manganese, and helps us consume important dietary fiber. So grill on!

WHY DOES PINEAPPLE BURN YOUR TONGUE?

Pineapple contains the enzyme bromelain, which burns your tongue because it breaks down the protein of the skin in your mouth. ย The skin repairs itself in a few hours; however, so donโ€™t be scared away from eating pineapple!

If you have the tendency of a burning mouth from pineapple, then sip it with some milk or eat it with yogurt.ย  The dairy helps to neutralize the acids in the pineapple.

The enzyme bromelain is also why I suggest using canned pineapple juice rather than fresh pineapple juice in many of my chicken marinades, like Pineapple Chicken and Hawaiian Chicken Kabobs; otherwise, the enzyme breaks down the chicken to a mushy consistency.

Can pineapple reduce belly fat?

Yes! Pineapple is suitable for your metabolism because it contains an enzyme named bromelain. Bromelain is found in pineapple juice and helps metabolize protein, which helps burn excess belly fat.

Ingredients

  • 1 ripe pineapple

Glaze

  • 4 tablespoons unsalted butter
  • 1/3 cup packed light brown sugar
  • 1/2 cup orange juice
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon ground cloves
  • 1 tablespoon lime juice, or more to taste depending on how โ€œtangyโ€ you want it/how sweet your pineapple is

Instructions

  • Peel the pineapple and cut it lengthwise into eight wedges; remove the core. Line a rimmed baking sheet or 9ร—13 pan. Set aside. *See Notes for detailed instructions on how to peel a pineapple.
  • Melt the butter in a small saucepan over medium heat. Add the brown sugar and stir to dissolve. Carefully stir in the orange juice (it will bubble up), followed by the chili powder, salt, pepper, and cloves.
  • Increase the heat and simmer until the mixture reduces to about ยฝ cup and thickens into a thin syrupy consistency (it will continue to thicken upon standing, so donโ€™t thicken too much). Remove from the heat and stir in the lime juice.
  • Let it cool a few minutes, then pour approximately 2/3 of the Glaze over the pineapple. Turn to coat. Reserve the remaining Glaze for basting. If the reserved Glaze becomes too thick, stir in a little water and return to heat.
  • Grill the pineapple over direct medium heat, basting with reserved Glaze, turning occasionally, until pieces have golden brown grill marks in places, about 7-10 minutes. Serve with remaining Glaze and additional lime and chili powder if desired.

    What if I wanted to do this at a tailgate? Would the pineapple to be OK to sit in the sauce overnight?

      Hi Lisa! The pineapple would be okay to sit in the sauce but I would make sure to not overcook the pineapple then reheat it in the microwave beforehand in order to melt the sauce again because it will harden somewhat due to the butter. Hope that helps!
