  • 8 strips thick cut bacon, optional (recommended)
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 3 10-oz pkgs frozen corn kernels, thawed
  • 2 tablespoons unsalted butter
  • 1 cup half and half
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 tsp EACH dried rosemary, dried thyme, paprika, pepper
  • Dash of cayenne pepper
  • Chopped parsley (optional for garnish)

Blender Corn

  • 1 1/2 cups frozen thawed corn from above listed corn (in directions)
  • 1 cup half and half
  • 4 oz. cream cheese, cubed, very soft
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon flour

Instructions

  • Blend Corn: Remove 1 ยฝ cups of corn from a package and add it to the blender, along with all remaining Blender Corn ingredients.ย  Blend until completely smooth, then set aside.
  • Cook Bacon: Cook the bacon in a large saucepan until crisp, then remove it to a paper-towel-lined plate.
