Buffalo Chicken Dip Crockpot

Ingredients
- 2/3 cup Frankโs RedHot Buffalo Wings Sauce, NOT original/traditional
- 3/4 cup full fat sour cream
- 2 tablespoons dry ranch dressing seasoning mix
- 1/2 tsp EACH chili powder, smoked paprika, garlic powder, onion powder, salt
- 1 pound (4 packed cups) cooked and shredded chicken (about 1 large rotisserie)
- 1/4 cup blue cheese crumbles
- 1 1/3 packed cups finely shredded cheddar cheese, divided
- 2/3 packed cups finely shredded mozzarella cheese, divided
- 8 ounces full-fat cream cheese, cubed into 12 pieces
For Serving
- Green onions
- Crumbled blue cheese
- Cilantro or parsley
- Chips, crackers, crostini, pretzels, veggies, etc.
Instructions
- Prep Crockpot: Spray the crockpot insert with nonstick cooking spray.
- Combine: In the crockpot, whisk together the hot sauce, sour cream, ranch seasoning, and spices. Then, stir in the chicken, blue cheese, 1 cup of shredded cheddar, and โ cup of mozzarella cheese.
- Add Cream Cheese: Microwave the cubed cream cheese for 25 seconds on a plate, then evenly distribute it over the chicken mixtureโ donโt stir it in.
- Cook the Stir: Cover and cook on low for 1 hour, then stir everything together.
- Cook Until Melted: Large, newer crockpots will be close to done at this point. Older or smaller crockpots may require an additional 1 to 1 ยฝ hours of cooking time, stirring occasionally, until the cheeses are melted and the dip is hot.
- Top with Cheeses: Evenly sprinkle the remaining โ cup of cheddar and โ cup of mozzarella cheeses on top. Cover and cook on low for an additional 20 minutes, or until the cheese has melted.
- Garnish and Serve: Turn the heat to low or warm while serving. Garnish with green onions and additional blue cheese if desired. Serve with chips, crackers, crostini, pretzels, and/or vegetables like carrots, celery sticks, and bell peppers.ย
