I love this marinated Greek chicken so much Iโve already shared recipes using it such as my Greek Chicken Gyros, Chicken Souvlaki, Beef Souvlvaki, Greek Gyro Pizzaย and One Pot BAKED Greek Chicken Risotto.ย With grilling season upon us, however, I wanted to highlight just this chicken, so you can grill it up, serve with some veggies/hummus/lemon rice/potatoes and call it a healthy, scrumptious meal or go Mediterranean style and serve with Greek pasta salad, flatbread, tomatoes, red onions, feta and either Tzatziki or yogurt and call it a delightful taste of Greece. ย But one of my favorite ways to serve this chicken is my Greek Chicken Salad with Pita Croutons and Tzatziki Dressing โ heaven. ย Can you tell Iโm in love with this chicken?

The Greek chicken marinade is made with a balance of tangy, bright ingredients, but what truly elevates it above the rest are the seasonings. The unique blend adds complex flavor without overpowering the subtleties of the oregano, lemon juice and balsamic.ย You will need:

CAN I USE OTHER CUTS OF CHICKEN?
Absolutely!ย This Greek chicken marinade will work with any cut of chicken including chicken thighs, chicken tenderloins, chicken drumsticks, chicken legs or chicken wings.ย You will just need to adjust the cooking times if you swap out the cut of chicken, so keep thatย meat thermometerย handy!

HOW MUCH CHICKEN WILL THIS MAKE?
This recipe will marinate 1 pound (16 oz.) of chicken, however, it is easy to scale up or down to suite your needs.ย 4 oz. of chicken is the recommended singleย serving portion of chicken, but this varies depending on the individual and what sides are being served.ย I would say 6-8 ounces is closer to realistic.

HOW TO MAKE GREEK CHICKEN MARINADE
You are going to love how easy this Greek Chicken Marinade is to make! ย Simply whisk together olive oil, lemon juice, balsamic vinegar and our hand picked herbs and seasonings of fresh garlic, dried oregano, basil, onion powder, cumin, salt, pepper and paprika. ย Add the chicken and marinate in the refrigerator for 2-8 hours.

This Greek chicken marinade tenderizes and flavors the chicken so all you have to do is marinate and cook!ย In order for a marinade to be effective, it must contain acid, fat, salt, sweetener and flavor enhancers.ย The combination of these elements ensures that the protein is juicy, succulent and flavorful from the inside out. WHAT IF IโM SHORT ON TIME?
This Greek chicken marinade is best if allowed to do its thing for at least four hours so the chicken can reap the benefits of the tenderizing properties. If you can only marinate for 30-60 minutes, then reserve some of the marinade and store it separately from the marinating chicken.ย Brush or drizzle the reserved marinade on the cooked chicken to add extra flavor.

HOW TO COOK MARINATED GREEK CHICKEN BREASTS
This Greek chicken marinade is so tasty and versatile, youโre going to want to serve it year-round!ย Hereโs a few different cooking methods to meet your year-round needs:

TO GRILL CHICKEN BREASTS
โขWhen ready to grill, remove chicken from the refrigerator and let rest 15-30 minutes ahead of time. Meanwhile, preheat grill to 375-400 degrees, clean and grease grates.
โขGrill chicken undisturbed for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 165 degrees F.) ย
TO COOK CHICKEN BREASTS ON THE STOVE
โขWhen ready to cook, remove chicken from the refrigerator and let rest 15-30 minutes ahead of time.
โขHeat 1 tablespoon olive oil in a large non-stick skillet or cast-iron skillet over medium-high heat. Once very hot, add chicken and cook, undisturbed, for 3-4 minutes, or until deeply golden on one side.
โขFlip chicken over, cover, and reduce heat to medium. Cook for approximately 4-6 more minutes (depending on thickness of chicken), or until chicken is cooked to 165 degrees F


TO BAKE CHICKEN IN THE OVEN
โขWhen ready to cook, remove chicken from the refrigerator and let rest 15-30 minutes ahead of time.
โขMeanwhile, preheat oven to 400 degrees F and lightly grease a baking dish with cooking spray.
โขDrain chicken from marinade and add to prepared baking dish.ย Bake, covered for 30-45 minutes (depending on thickness), or until internal temperature reaches 165 degrees F.


HOW DO I KNOW WHEN MY CHICKEN IS DONE?
Chicken breasts are done via any cooking method when they register 165 degrees F on anย instant read thermometer.ย I highly recommend investing in a meat thermometer otherwise there is no accurate way to check and see when your chicken is cooked without slicing and loosing valuable juices.

โขStorage:ย store cooked Greek chicken in airtight containers in the refrigerator for 3-4 days.
โขMicrowave:ย chop up or slice the chicken so it reheats more evenly then transfer a small portion to a microwave safe dish.ย Heat for one minute then at 30 second intervals as needed.ย
โขOven:ย transfer chicken to an oven-proof dish.ย Cover with foil and reheat at 350 degrees F for 10 minutes or just until warmed through.
HOW TO FREEZE
You can freeze the uncooked chicken in the marinade or after itโs cooked.
โขFreeze chicken in marinade: add the chicken to the marinade ingredients in a freezer safe bag, squeeze out excess air and freeze for up to 3 months.ย When youโre ready to use, the chicken will marinate as you thaw the chicken in the refrigerator.
โขFreeze chicken:ย ย after you have cooked the chicken, let it cool completely then transfer it to an airtight container or plastic freezer bag and squeeze out any excess air. Freeze for 2 to 3 months.
Can you freeze chicken in Greek Marinade?
Yes!ย If you canโt get to cooking your chicken within 8 hours,ย just pop it in the freezer โ another perk of using sealable plastic bags. When itโs time to cook, just thaw and cook!

Donโt marinate the chicken longer than 8 hours because the acid in the marinade can break down the muscle fibers too much and make your chicken mushy.

Ingredients
- 1 pound boneless skinless chicken breasts pounded to 1/2โณ thickness
Greek Chicken Marinade
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 tsp EACH cumin, dried basil, onion pwdr, sugar, salt
- 1/4 tsp EACH pepper, paprika
Instructions
- Whisk together all of the Greek Marinade ingredients in a large freezer bag and add chicken. Marinate 4-8 hours.
- Remove chicken from fridge and let sit at room temperature 20-30 minutes.
SKILLET DIRECTIONS:
- Heat one tablespoon olive oil in a large non-stick skillet over medium high heat. Once very hot, drain chicken from marinade, pat dry and add to skillet.
- Cook undisturbed for 3-4 minutes, or until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 4-6 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to cutting board and let rest 5 minutes before slicing.
GRILL DIRECTIONS:
- Meanwhile, grease and preheat the grill to medium heat, 375-450ยฐF.
- Grill chicken undisturbed for for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 165 degrees F.) Remove chicken from grill and let rest 5 minutes before slicing.

This Greek chicken marinade is so easy and tastes amazing! I use fresh oregano and lemons from my garden. My husband and I both love it and weโve grilled with it a few times already. A local lotto winner, turned restauranteur, built a multi store business grilling fresh chicken in my town. I yearned for the recipe for over 20 years and all I could determine was that he used cumin in his Greek marinade. His chicken is absolutely fantastic. Now I know how he did it. Is it ok to use siracha instead of the gochujang in the Korean bowls? My local Shoprite didnโt have it.

Hi Debbie, there is a notable flavor difference between the two with Gochujang being sweet and spicy and Sriracha being tangy spicy. I think using Sriracha would be fine but I would start with 1 tablespoon and add more to taste. Hope this helps!

Hi Karen, minced garlic doesnโt last that long once chopped, so I would say about 3 days. If you replaced the garlic with garlic powder then I think it could last 1-2 weeks because the only ingredient you would need to worry about is the lemon juice which can last some time. Hope that helps!

Your recipe looks rad but I have a question in a suggestion.
I almost never ordered chicken a restaurant because itโs so much cheaper than any of the other meats so I feel like Iโm getting ripped off. Plus I like turkey better than chicken on the whole because itโs a pretty bland meat. Just the same, your marinade sounds delicious.
I assume youโre grilling instructions are for direct heat, but we all know what assume means. Also would be cool if you put the date of your articles at the top below your byline.

This Greek marinade was fabulous! Went with a mediterranean theme for dinner tonight, making your lemon rice & your tzatkiki sauce as well to serve with warm naan bread. The kids were smearing tzatkiki sauce on the bread with slices of chicken and loved it. The key is to not over-marinate, so if youโre going to marinate first and then freeze, then cook the chicken as soon as itโs thawed. HI Mike, 12 hours should be okay but any longer and you run he risks of mushy chicken. It might be okay but it might not so that is why I caution a shorter marinade time. Good luck!

This was absolutely delicious. So flavorful and juicy. I did not pound to thin the breasts but instead left them at full thickness. They were standard-sized organic chicken breasts; not the overly huge ones that are showing up these days. Served with lemon rice, some Taziki, some humans, and a Greek salad. It was a huge hit and I will certainly be making these again. I did double the recipe so we had leftovers which were just as good.
