STEP 1:ย PREP POTATOES
- Prep work:ย Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray with cooking spray for easy cleanup.
- Clean potatoes:ย Scrub potatoes and dry very well. The drier the skins, the crispier they will become.
STEP 2:ย HOW TO CUT HASSELBACK POTATOES
- Create a flat base:ย Because of their round nature, potatoes are wobbly.ย In order for them to lay flat and not move around under your knife (dangerous!) or while baking, create a flat bottom. To do this, simply make a thin slice along the bottom of the potato โ now your potato will lay flat and no one will ever know!
- Slice the potatoes: Next, place the potatoes flat on a cutting board and slice the potatoes into 1/8โ slices without slicing all the way through the potato โ you will want to leave about ยฝ inch of the potato intact on the bottom.ย ย Try and make the slices as uniform as possible as this will ensure more even cooking, but donโt stress too much about it.ย You can place two wooden chopsticks or utensil handles along the sides of one potato to help prevent you from slicing all the way through the base of the potato. ย Take care on the tapered ends, however, you will have to eyeball these completely because they are above the chopsticks.ย

STEP 3:ย grease the skin
- Cover with olive oil:ย Transfer the potatoes to the prepared baking sheet and drizzle with 3-4 tablespoons olive oil, enough to generously coat the potatoes.ย You can also use bacon grease or vegetable oil.ย I find it easiest to coat them in oil by rubbing the oil in with my hands.
- Space out the potatoes:ย Make sure the greased potatoes arenโt touching or else they will steam instead of bake up crispy.

STEP 4:ย bake the potatoes
- Bake:ย Bake the potatoes at 450 degrees F for 50 to 60 minutes or until the potatoes are tender in the center.ย Smaller potatoes will take less time and larger potatoes can take even longer, closer to 75 minutes.

STEP 5:ย add the garlic thyme butter
- Make the Garlic Thyme Butter: Near the end of the baking time, time mix together all of the Garlic Herb Butter ingredients in the medium bowl.ย You donโt want to mix the ingredients together too early or the butter will start to harden.

- Add the Garlic Thyme Butter:ย Brush the butter in between every slice using a pastry brush.ย Donโt worry if butter drips off while youโre working, it will pool and can be used to baste the potatoes at the end of roasting.ย

STEP 6:ย add the cheese
- Add cheese:ย Insert the cheese slices in between every other cut of potato or every few potato slices if using 8 ounces cheese or in between every cut if using 16 ounces of cheese.
- Melt the cheese:ย ย Return the potatoes to the oven and bake for an additional 3-5 minutes or until the cheese is melted.
- Serve:ย Garnish with additional chopped chives if desired and serve immediately.

Air Fryer Hasselback Potatoes
To make this recipe in the air fryer:
โขPreheat Air Fryer to 350 degrees F. Spray the basking with nonstick cooking spray.
โขRub the sliced potatoes with oil and place in the basket.
โขBake the potatoes at 350 degrees F for 35-40 minutes or until tender.
โขOpen the basket brush in between the slices with the Garlic Thyme Butter and add the cheese.
โขReturn and bake for an additional 3 minutes or until the cheese is melted.

Hassleback Potato Recipe with Garlic Thyme Butter

Ingredients
Potatoes
- 6 medium Russet potatoes, scrubbed, patted very dry
- 3-4 tablespoons olive oil
- 8-16 ounces Gouda, thinly sliced into 1-inch squares (See Notes)
Garlic Thyme Butter
- 8 tablespoons unsalted butter, melted
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 tablespoons chopped chives
- 1 tablespoon chopped fresh thyme (or 1 tsp dried)
- 1 tablespoon chopped fresh rosemary (or 1 tsp dried)
- 1 teaspoon salt
- 1/2 tsp EACH pepper, paprika
Instructions
- Preheat the oven to 450 degrees F. Line a rimmed baking sheet pan with foil and spray with cooking spray.
- Slice the very bottom off of each potato so they lay flat on a cutting board. Make a series of 1/8-inch slices along the top of each potato, stopping ยฝ inch from the bottom so you don't slice all the way through the potatoes. You can place two wooden chopsticks or utensil handles along the sides of the potato to help prevent you from slicing all the way through โ but take care on the tapered ends because they are above the chopsticks.ย
- Transfer the potatoes to the prepared baking sheet and drizzle with 3-4 tablespoons olive oil. Use your hands to rub all sides of the potatoes thoroughly with the oil.
- Bake the potatoes for 50 to 60 minutes OR until the center of the potatoes are tender. Near the end of the baking time, mix together all of the Garlic Thyme Butter ingredients in a medium bowl.
- Once the potatoes are tender, remove the pan from the oven. Brush the Garlic Thyme Butter in between every slice (it's okay if some butter drips on the baking sheet). Insert the cheese slices in between every other cut or every few cuts of potato (if using 8 ounces cheese) or in between about every cut if using 16 ounces of cheese.
- Return the potatoes to the oven and bake for an additional 3-5 minutes or until the cheese is melted.
- Garnish with additional chopped chives if desired. Serve immediately.

- Gouda: ย There are a lot of potato slices, which means you need a lot of cheese to fill them!ย You can stick with 8 ounces of Gouda and place every other slice or every few slices or splurge and use 16 ounces Gouda which will fill about every slice.ย

- How to store: Store in the refrigerator in an airtight container or wrapped tightly in plastic wrap or foil for up to 5 days; freeze if storing longer. ย
- To freeze: ย Frozen Hasselback Potatoes wonโt boast the same crispy, creamy texture once thawed, so I would only freeze leftovers and not freeze specifically to serve company in the future.ย ย Place the potatoes on a baking sheet once cool and flash freeze for one hour.ย Wrap each potato in plastic wrap and store in an airtight container. Freeze potatoes for up to 3 months. When ready to eat, thaw potatoes in the fridge for 24 hours.ย

This was my first attempt at Hasselback potatoes. Sadly, it was a failure. I could not understand why. The only reason that popped into my head way after the dinner was over was that I sliced them the night before and stored them overnight in water. I thoroughly dried them the following day. They were out of the fridge at 8:00 am and in the oven at 3:00 pm. They would not cook. Ninety minutes in the oven, and the slices were still uncooked toward the center. Iโm not giving up on the Hasselback. I will not keep them in water overnight again. I bet if I slice them the day I use them, Iโll have better results. The potatoes were put on the table with dinner. The feeling was that they looked beautiful, and all things considered, they werenโt that bad. Iโll definitely try them again.

Iโm glad youโre not giving up on them! Soaking in water shouldnโt have caused any issues. If you were using large potatoes, they might have needed 30-40 extra minutes. If they still donโt bake, I would check if the oven is calibrated accurately, an incorrect temperature setting can affect cooking. Hope this helps!
