Cook Time 40 minutes
Total Time 50 minutes
Servings 3 potatoes

Ingredients

  • 3 medium russet potatoes
  • 1-2 teaspoons olive oil
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked pepper
  • Topping Ideas: Butter, sour cream or Greek yogurt, green onions, chives, cheese, bacon, broccoli (See post for LOTS of creative ideas!)

Instructions

  • Prep: Set the air fryer to 400°F using the air fryer setting.
  • Wash & Prick Potatoes: Wash and thoroughly dry the potatoes. Use a fork to poke each potato about 8 times all over.
  • Oil the Potatoes: Drizzle olive oil over the potatoes (or I use my favorite oil sprayer), then rub evenly all around the outsides. It is easiest to pick up the potatoes one at a time to do this.
  • Season the Potatoes: Whisk together the salt and pepper, then sprinkle half over the top of the potatoes; rub in, then sprinkle the rest over the other side.
  • Air Fry: Place the potatoes in the basket of an air fryer, leaving a little space between each. Cook for approximately 40-55 minutes, flipping halfway. The cooking time will vary depending on the size of the potatoes – they are done when they are fork-tender. See cooking times below:
Medium Russet Potatoes (about 7–8 oz. each): 40–45 minutes at 400°F
Large Russet Potatoes (10–12 oz. each): 45–55 minutes at 400°F
•Extra-Large Potatoes: Up to 60 minutes at 400°F
  • Rest: Remove the potatoes from the air fryer using tongs and let cool for 5 to 10 minutes.
  • Slice and Serve: Slice each potato down the top middle (not all the way through), then gently press the ends in towards the middle to help open. Fluff the insides and serve with toppings. Check out the post for TONS of topping ideas!
